[Recipe] Salmon Bagels – A Quick Weekday Lunchbox Idea

IkeaSalmonI like to pack lunch to work and am always looking out for new ideas to add variety to my meals. The recipe I’m sharing is great for the time-pressed as it can be put together quickly. It requires no cooking too – which means less cleaning up to do. And it uses IKEA‘s responsibly-sourced salmon. Great way to inject Omega-3 into your diet and have a wholesome meal while dining responsibly!

IKEA’s LAX NAJAD, marinated smoked salmon. It’s a versatile product that is frozen-packed but still fresh as all taste and nutrients have been locked in. It’s good enough to eat on its own due to the marinade. Salmon is good for you too – it’s protein-packed and full of Omega-3 fatty acids. I can’t wait to create more salmon-based meals with this. Wraps, salads, waffles, sandwiches, rice bowls, etc… The possibilities are endless.

Here, I used it to make bagels. It reminds me of the time I was in NYC hunting down one of the best lox bagels at Russ & Daughters. Glad to be able to reproduce something similar at the convenience of my home kitchen!

Serve with IKEA’s ÄTBART cutlery set or devour with your bare hands.

Ingredients (serves 1):

1 store-bought oat bagel (cut into half)

1 package of IKEA’s LAX NAJAD salmon

2 tbsps of caviar (Tobiko or Ikura)

50g cream cheese

quarter of a red onion, sliced thinly

cucumber, sliced thinly

black pepper, to taste

some capers (optional)

Step by step:

  1. Spread the cream cheese on top of one half of the bagel.
  2. Roll up the salmon and place it on the cream cheese.
  3. Top with some red onion, cucumber and caviar.
  4. Garnish with capers and season with black pepper. Top with the other half and serve.
